Our first Thief in a while. Previously marketed as a light red/rose style. We found this confused matters, so this is labelled as simply a rose.
We use free run juice from various Mourvedre and Grenache wines- it's called saignee, we bleed some free run juice after just 24 hours of fermentation so there is just some deep pink colour, lots of flavour but not tannin. A small amount is made from whole-berry fermented younger vines. The blend is a majority Mourvedre-Grenache blend. We used some Cabernet Sauvignon too. When blending in July we felt the wine needed a stronger juicier component so around 3% Shiraz red wine was blended in. This gave us some colour and flavour. Bottled just off-dry with 4 grammes per litre residual sugar. Deep pink with a salmon pink hue on the rim. Has bright cherry fruit on the nose. Rosehip, raspberry and a touch of cassis too. On the palate it's full of ripe berry fruit, some spice too. It's juicy and vibrant with real depth. Can be served cool as a light red with fish, but also really good with spicier starters, pizza, griiled fish and meats. A versatile food wine but also an appealing glugger!
