Dignité Viognier Vin de Pays d'Oc

Made by winemaker Eric Monnin. He chose this particular parcel of grapes to try and make something special. The grapes were harvested at optimum ripeness. 70% was aged in new Burgundian oak barrels , 20% in 3 year old barrels for 3 months. The remaining 10% was kept in tank. In all less than 500 cases were produced. It's certainly a style that opens up in the glass. The oak is well handled. Rich perfumed nose of honey, apricot, lime and creamy nutty oak. It's rich on the palate. Lots of extract and body. spicy with honeyed pear and stone fruit. Nutty oak too. It's got enough acidity to balance the weight. The oak is well integrated. I would like to see this develop over the coming months. The finish is a touch heavy and spicy now, if it can open up and develop some tangy fruit it will be very good indeed.
